Pork Cutlet and Apple Panini

- 44Canadian Pork Loin Cutlets, delicated
- 44panini or mini-baguettes
- 1 cup250 mLbaby arugula
- 11apple, thinly sliced
- 5 oz150 gsharp cheese, sliced
- 1 Tbsp15 mLcanola oil
- 1/2-1 tsp2-5 mLpaprika
- salt and freshly ground pepper to taste
Directions
Slice bread in half lengthwise. Open and garnish 4 bottom slices with arugula, apple slices and cheese. Heat oil in a nonstick pan over high heat. Quickly cook cutlets, 1 – 2 minutes per side, depending on thickness. Add pork to breads. Sprinkle with paprika; season with salt and pepper. Cover with top bread slices. Heat a large grill pan on medium-high heat. Arrange sandwiches in pan. Brown each side, flattening them with a spatula. Serve immediately.
